Open any glossy magazine these days and you will no doubt find a Hollywood celebrity gushing about their latest weight loss ‘success’ story. And there are always plenty of readers ready to adopt their particular brand of “low carb” diet.

What you often don’t read about is the tragic story of weight piling back on as that celebrity becomes the latest victim of an extreme diet which is highly restrictive and too difficult to follow.

When you eat carbohydrates they are digested and broken down to glucose. That glucose then enters the bloodstream causing your blood sugar levels to rise, which triggers insulin to be released.

You have probably heard of the glycemic index or GI.Carbohydrate foods with a low GI are released slowly into the blood, whereas high GI foods are quickly absorbed into the blood stream. The slow absorption of glucose from low GI foods causes blood sugar levels to rise and fall more slowly which will keep you feeling full for longer.

But it is important to know which carbohydrates are good to eat and it is also essential to have the right combination of carbohydrates, fat and protein in your diet.
