Spicy Beef Meatballs

A hearty meal that is perfect for a cool autumn night!

Ingredients (Serves 4)

2 slices of Mountain Bread
460 grams (16oz/1lb) lean beef mince
4 cloves garlic, crushed
1 teaspoon hot paprika
1/2 cup parsely, chopped
Sea salt and ground black pepper
1 tablespoon virgin olive oil, cold pressed
1/4 cup fresh oregano, chopped
1 small chilli, seeded and chopped
2 medium tomatoes, chopped
1 cup vegetable stock (or water)
1/4 teaspoon cayenne pepper
400 grams (14oz/0.9lb) button mushrooms, sliced


Instructions:

Preheat oven to 200 degrees.

1.Place Mountain Bread into food processor. Blend until resembling fine bread crumbs.
2. Add mince, 2 cloves of garlic, paprika, 1/4 cup parsley, salt and pepper. Process until combined. Form into small balls.
3.Place meatballs on oven tray lined with baking paper. Bake uncovered 15-20 minutes or until cooked through.
4.Heat oil in pan, add 2 cloves garlic, oregano and chilli sauté for 1 minute. Add tomato, vegetable stock, cayenne pepper and freshly ground black pepper to taste.
5.Simmer covered 15 to 20 minutes.
6.Toss through mushrooms and simmer a further 10-15 minutes.
7.Add meatballs and mix through.
