Cream of Broccoli Soup
Preparation time: 10 mins Cooking time: 6 - 8 mins
Ingredients (Serves 4)
* 500g broccoli, blanched
* 4 cups of vegetable stock (see vegetable stock recipe)
* Pinch nutmeg
* 300g light cream cheese
* Sea salt
* Black pepper
* 1 slice of Mountain Bread
Instructions:
1. Place all ingredients into blender, process until smooth.
2. Pour soup into large saucepan and heat before serving. Season to taste with salt and freshly ground black pepper.
3. Serve in bowls with toasted Mountain Bread as a delicious accompaniment.
