Beef with Stir Fry Asian Mushrooms

Serve with steamed green beans.

Ingredients (Serves 4)

* 460 grams cold pressed beef medallions
* 1 tablespoon extra virgin olive oil
* 1 teaspoon black pepper, freshly ground
* 2 cloves garlic, crushed
* 2 tablespoons chives, finely sliced
* 1 teaspoon lemon thyme, chopped
* 100 grams oyster mushrooms, sliced
* 100 grams enoki mushrooms, sliced
* 100 grams shiitake mushrooms, sliced
* Sea salt
* Black pepper
* 300 grams green beans, steamed


Instructions:

1. Drizzle medallions with oil. Sprinkle ground black pepper over the top. Heat frying pan and cook or chargrill steaks over medium high heat for 5 mintues each side or until cooked to your liking.
2. Remove steaks from pan, allow to rest.
3. Saut
é garlic, chives, lemon thyme and mushrooms in pan over high heat for 4 minutes.
4. Season with salt and pepper
5. Top steaks with mushrooms, drizzle with pan juices.
